Some Recipes Are Just Way Too Easy

Sometimes we just need something quick and easy, with ingredients that are easy to keep around the housel  Here are my favorite ‘way too easy’ recipes!

  • 3 2 1 Microwave Cake – Whether you live in a dorm or spend your life in a cubicle, these amazingly easy cake recipe is impossible not to keep around for those cake emergencies!  Mix one box of angel food cake mix with one box of any flavor cake mix (chocolate is highly recommended).  This dry combination stores and ships wonderfully.  When you’re ready for cake, combine three tablespoons of the mix with two tablespoons of water into a microwavable container and microwave for one minute.  Let it rest and set, and enjoy!
  • Tortilla Soup – Two cans of condensed chicken and rice soup, one can of tomatoes plus green chiles, and one can of tomato sauce.  Voila, instant tortilla soup.  Just heat all together, and serve with your favorite toppings, such as crushed tortilla chips, shredded cheese, and sour cream.  This one is terrifically easy to keep around the house since most of the ingredients are canned goods.
  • Ravioli with pesto – Fresh ravioli plus pesto sauce makes a great weeknight dinner.  Fresh ravioli only boil for about four minutes, and pesto sauce does not have to be heated.  Top with diced tomatoes and shredded Parmesan for a fresh burst of flavor.
  • French bread pizzas – These are particularly good for unexpected groups.  Start with regular deli sandwich rolls, sliced in half.  And top with anything and everything you have available.  Marinara, pesto, or alfredo sauce; sliced vegetables, pepperoni, pineapple, black olives, shredded cheese.  Just bake at 375 until the bread gets crisp and the cheese melts.
