Healthy Soup Recipes To Keep You Warm This Winter

Soups can be the best choice especially during the cold seasons as they are considered as the healthiest low calorie meals that provide the needed amount of nutrients to your body. Thus, if you are looking forward to enrich your daily menu with some delicious soups, take a look and get some leading ideas!

Asparagus Soup

Healthy due to vitamins A and C, potassium iron, magnesium, selenium and folate that it contains this super tasty asparagus creamy soup can be one of the best options to stick with!

Ingredients:

2 pounds green asparagus

1 large chopped onion

3 tablespoons unsalted butter

5 cups chicken broth

1/2 cup crème fraîche or heavy cream

1/4 teaspoon fresh lemon juice

Thus, start by cutting tips from the asparagus and cook onion using 2 tablespoons of butter in low hit until softened. Once you’ve done that garnish with asparagus pieces, salt and pepper and cook stirring. On the next step follow adding about 5 cups of broth and let it simmer. While it simmers start cooking the chopped pieces of asparagus in boiling salted water for about 4 minutes.

At last pour the soup into a bowl and blend until smooth, stir in crème fraîche boil and whisk using the remaining butter.

Chicken Soup

A great source of protein chicken soup can be another good option for you menu of healthy dishes! Besides chicken soup is really easy to make, so it can be a great alternative for you if you don’t have much time to spend on cooking.

Ingredients:

1 leftover turkey carcass

2 quarts water

1 medium onion

1/2 teaspoon salt

2 bay leaves

1 cup chopped carrots

1 cup uncooked long grain rice

1/3 cup chopped celery

1/4 cup chopped onion

1 can cream of mushroom soup

First of all place the turkey carcass into a bowl and follow adding the water, bay leaves, salt, onion, cover and boil over low heat, cover and let simmer for about 2 hours. Once you’ve done that, remove carcass, cool and strain broth. On the next step pour broth again into the pan and follow adding carrots, rice, chopped onion, celery, cover and simmer until tender. At last, prepare the turkey pieces and add it with mushroom cream to broth and heat through.

Chicken Noodle Soup

Ingredients:

1 1/2 cup wide egg noodles

1/2 cup chopped onion

1/2 cup chopped celery

3/4 cups sliced carrots

1 1/2 cup cooked chicken meat

6 cups chicken broth

1 1/2 cups vegetable broth

1/4 cup water

1/2 tsp dried basil

1/2 tsp dried oregano

1 tsp poultry seasoning

1 tsp salt

Pour water into a large pot and let it boil then add egg noodles and let them boil for about five minutes. Now, cook onions and celery together using some butter. Once you’ve done that add carrots, chicken,   chicken broth, water, vegetable broth, basil, oregano, salt, pepper and poultry seasoning. Now bring all these ingredients into a boil and let it simmer for about 15 minutes over low heat.

Herbed Zucchini Soup

Ingredients:

3 cups chicken broth

1 1/2 pounds zucchini, (about 3 medium), cut into 1-inch pieces

1 tablespoon chopped fresh tarragon, or dill or 1 teaspoon dried

3/4 cup Cheddar cheese, (3 ounces)

Pepper and salt

Grab a saucepan and place into it the broth, tarragon and zucchini and let boil over high hit then reduce to a simmer cook for about 7 minutes. Once you’ve done with that process place the mixture into the blender and blend until smooth. On the next step pour the soup into a pan again and heat over medium-high heat stirring in cheese. On the last step add salt and pepper, let it cool and simply enjoy.

Delicious Tomato Soup

Ingredients

3 tablespoons olive oil

2 chopped red onions

2 carrots, unpeeled and chopped

3 cloves tablespoon minced garlic

4 pounds vine-ripened tomatoes, coarsely chopped (5 large)

1½ teaspoons sugar

1 tablespoon tomato paste

¼ cup packed chopped fresh basil leaves

3 cups chicken stock, preferably homemade

1 tablespoon kosher salt

2 teaspoons freshly ground black pepper

¾ cup heavy cream

Grab a large pot, add in olive oil and let it heat on low-heat. On the next step follow adding carrots, onions and saute and cook for about 10 minutes more until tender. Then add the garlic, wait a minute and add also sugar, tomatoes, tomato paste, basil, chicken stock, salt and pepper and stir well. Now bring the soup to boil, lower the heat and simmer for 40 minutes. On the last step simply add the cream into the soup and reheat it over low heat.
