1.Staffed Potatoes with Artichoke

 

Ingredients:

4 scrubbed potatoes
2 – 5 or 6-ounce cans of light tuna
¾ cup nonfat plain yogurt
½ cup plus 2 tablespoons chopped fresh basil
1 6-ounce jar marinated artichokes chopped
2 chopped scallions
1 tablespoon capers, rinsed
¼ teaspoon salt
½ teaspoon black pepper
¾ cup shredded provolone cheese
1 plum tomato, chopped

Preparation:

Bake the potatoes on the microwave on medium heat until they get soft enough. Now, add in a medium bowl tuna, artichokes, basil, yogurt, scallions, capers and pepper and salt. On the next step cut a small part of the top of the potato and scoop out the insides. Once you’ve done that add that part in to the mixture that you’ve made already and mash well. Now put back the mixture in the empty surface of the potatoes and cover up with the cheese. At last microwave about 30 seconds and serve combined with basil and tomato.

2.Artichoke Dip

 

Ingredients:

1 1/2 cups thawed, chopped frozen kale
½ cup thawed chopped frozen artichoke hearts
¾ cup shredded low-fat Swiss cheese
¾ cup skim milk
1/3 cup freshly grated Parmesan
4 ounces reduced-fat cream cheese
½ teaspoon Worcestershire sauce
Large pinch cayenne pepper
Kosher salt
1 small clove garlic
Multi-grain corn tortilla chips

Preparation:

Turn the heater to 450 degrees in order to prepare it for the following process. Now, combine in a bowl all the ingredients except from one tablespoon Parmesan and cream cheese. On the next step dab the mixture into a baking dish (preferably 1-quart) add the rest of both cheeses on the top and bake for about 20 minutes. Once it’s ready, simply serve with tortilla chips.

3. Pizza with Artichokes

 

Ingredients:

1 frozen 12-inch cheese pizza
3 slices deli ham
2 ounces sliced hard salami, julienned
1/3 cup chopped roasted red peppers
1/3 cup marinated artichoke hearts
¼ cup pitted Greek olives
¼ cup shaved Parmesan cheese
¼ cup minced fresh basil

Preparation:

Top the pizza with salami, ham, olives, artichokes and peppers and bake for about 12 minutes at 450 degrees. Once it’s ready serve garnished with Parmesan cheese and basil.

4. Roasted

 

Ingredients:

1 ½ cups olive oil
1 ½ cups dry white wine
2 tablespoons dried oregano
2 to 3 teaspoons crushed red chile flakes
12 cloves garlic, chopped
Salt and black pepper
6 globe artichokes, with removed stems

Preparation:

Start with preheating the oven at 500 degrees. Combine in a bowl the wine, oil, chile flakes, oregano, salt and pepper and leave the mixture aside for a while. On the next step cut a part of the artichokes pulling the leaves apart and put them in the baking dish. Now grab the mixture that you’ve prepared previously and pour it over the artichokes. Cover with foil and bake for 45 minutes. At last, remove the foil, bake for extra 30 minutes before serving.

5. Artichoke Appetizer

 

Ingredients:

1 6.5-ounce jar marinated drained, chopped artichoke hearts
½ cup grated Romano cheese
1/3 cup chopped red onion
5 tablespoons mayonnaise
1 French baguette, cut into thick slices

Preparation:

Start by preheating the boiler and follow combining together the artichokes, red onion, cheese and mayo. On the next step apply the mixture on the baguette slices, put on the baking sheet and bake for about 2 minutes.

6. Chile with Artichokes

 

Ingredients:

2 large artichokes
8 ounces shredded Mexican cheese blend
5 ounces evaporated milk
1 4-ounce can drained, chopped green chiles,
½ cup minced fresh cilantro

Preparation:

Prepare the artichokes by removing 1 inch from the bottom part and removing the outer leaves. Now pour some water in a saucepan and put the artichokes in to boil. On the next step reduce heat and let it on for 35 minutes. Afterwards, turn the artichokes and let them drain for a while before you remove the fuzzy part from the center. Now grab a microwave safe bowl and add in cheese, chiles and milk and cook on high heat until you notice that the cheese starts melting. Stir the mixture few times, follow adding cilantro and stir again. At last fill the artichokes with the cheese and whoila! Enjoy!
